In Turkey, leeks are a popular winter vegetable which are grown in all parts of the country. Leeks have a very big share in the winter vegetable consumption in regions with continental climates. There are two main varieties: summer and winter leeks. Summer leeks are paler green and softer. They have a shorter shelf life and are prone to cold temperatures. The palm of the leaf is shorter and more erect. Winter leek stalks are two to three times longer than their summer counterparts. Export grade leeks are the winter variety which are mostly grown in Mersin, Tarsus and Izmir, Torba.
